Mixing The Ingredients

As a Chaldean and Middle Eastern, shawarma is in my blood. Ever since I was little girl in Baghdad, Iraq we ate Shawarma on the weekends. Although beef shawarma is my favorite to eat with sesame bread freshly backed from the oven, I enjoy eating chicken Shawarma a lot.

I found this recipe on the New York Times website, and I also watched the video. My mouth was watering and I wanted to jump inside my phone and eat each piece of the chicken.

About To Mix The Chicken Thighs With The Marinade

The recipe is easy and simple to prepare and it doesn’t take that long time to make. I lost count of how many times I did this recipe for my meal prep. Sometimes I like to add carrots and potatoes with it. It gives it a great taste.

I always marinate the chicken over night.That way all the ingredients are soaked in the chicken.

Ingredients

  • Juice of two lemons
  • 1/2 cup of olive oil
  • 6 cloves of garlic, minced
  • 1 teaspoon of salt, I usually use Himalayan salt
  • 2 teaspoon of paper
  • 2 teaspoon ground cumin
  • 2 teaspoon paprika
  • 1/2 teaspoon turmeric
  • pinch of ground cinnamon, you might think it’s weird but believe me it tastes amazing.
  • If you love a little bit of heat, add a some read paper flakes
  • 1 teaspoon of sumac, I added this amazing ingredient and OMG the taste was out of this world.
  • 2 LBs of chicken thighs
  • One onion, cut in quarters
  • parsley for garnishing

Instruction

  1. Make sure to take the skin off the chicken.
  2. Mix all ingredients, marinade the chicken over night.
  3. Next day, preheat oven to 425 F.
  4. Cook chicken for 30 – 40 minutes or until chicken reaches temperature 165 F.
  5. If you like your chicken to be crispy, cut the chicken in bite pieces and saute it for two minutes.
  6. Garnish your plate with parsley.
  7. Enjoy the great taste.

Few weeks ago, I started having dry cough. I thought it was going to go away in few days. Especially when I don’t have a fever šŸ¤’, I thought working out was great medicine for me. Two weeks in this & I couldn’t take it anymore. I went to Urgent Care & I was told that I had bronchitis. The doctors ordered to stay home for two days & just REST. For the past two days, I rested a lot and I did so many things. I relaxed, read books & most importantly slept. When your body is not feeling well, you need to take a break and listen to your body’s needs. Resting is the best thing I have done for the past two days & today I feel so recharged & feeling much better.We only have one body, and our job is take care of it and listen to it. Yes, we all want to workout no matter what, yet, it is important to give our body the chance to rest.

My Fitness & Health Journey

Hello everyone😊. I came to the United States with my family back in 2003, we settled in the beautiful San Diego, CA. I was not used to the big meal portions, soda, candy and chocolate. I gained so much weight & I didn’t look happy. The picture on the left was back in 2008, I was wearing size 14 dress. I was in college when a friend of mine told me that I look fat and should do something about it. My world was crushed and I cried all night. The next morning, I went and registered at 24 Hour Fitness; I worked out everyday. For one year, I cut junk food, soda, bread, rice, ice cream and my most favorite, chocolate. In 2009 for the first time in a long time, I was able to fit in size 5 jeans. I couldn’t believe myself and I think everyone @ Macy’s heard how happy I was. When I met my husband Thomas, he introduced me to Beachbody. My first Beachbody workout was Insanity. I did Insanity before I got married, I weight 125 lbs. After I had my beautiful daughter Josephine in November 2015, I slowly got back to workout. My Christmas gift was weights & 21 Fix containers. I did 21 Day Fix and went from 145 – 128 lbs in just 21 days. I also did 21 Day Fix Extreme and Insanity Max 30. In January 2019, I did Lift 4 & OMG what a transformation.
